Egyptian cuisine is a delicious fusion of Arabic and Mediterranean influences. Try Falafel, round patties made from ground broad beans or chickpeas. They can be enjoyed in warm pitta bread accompanied by a crispy salad and tangy yoghurt sauce. The national dish is fool, a hearty stew made with broad beans, garlic, tomatoes and paprika. Chickpeas, rice and couscous play a part in most dishes and are often served with aubergines, chicken and lamb, or if you are on the coast freshly cooked fish. Don’t forget fresh fruit like figs, oranges and lemons for dessert.
